Description: Pu dong (Thai script: ปูดอง) are pickled (dong) raw freshwater crabs which are called pu na in Thai, meaning "rice paddy crab". These pickled crabs are most often used in som tam pu dong (papaya salad with pickled crab) or as the main ingredient in yam pu dong (pickled crab yam-style salad). A less frequently used name for pu dong is pu khem (khem = salted).
