Description: Phla nuea makhuea on (Thai script: พล่าเนื้อมะเขืออ่อน) is a Thai salad made with medium rare beef and Thai aubergines (Thai eggplants). The sliced, raw eggplants are mixed in with the warm beef at the last moment to soften them (makhuea on = "soft aubergine"). This particular version of the salad was served with a nam tok-style dressing.
