Description: This is the real thing or Ilocano way of the kilawen: goat skin and meat just after the pulpog (i.e. burning off the hair through fire), sliced into smaller pieces ala sisig, cooked in basi or ilocano vinegar and finely chopped fresh onions and ginger, seasoned with salt and pepper, and spiked with calamansi. A Tagalog variation is called kapukan where the meat is boiled before being prepared, which actually defeats the purpose of the kilawen. Nikon D40 (MVI 2009 Archive)
